RE-cipe sharing: Texas Caviar w. Black Eye Peas

Texas Caviar is a favorite dish of mine for 2 reasons. First, it is an easy to make appetizer.  Second, it is also the most delicious way to eat Black Eyed peas on New Year's Day.  There is a long time Southern legend that eating Black Eyed peas on New Year's Day will bring you good luck.   I know it seems silly, but it couldn't hurt to eat some, right?  I got one of my sisters-in-law, Sonia, to volunteer her Texas Caviar recipe for the blog.  Be warned, this is a very addicting dish.  Once you start dipping in your tortilla chips, it is hard to stop.  The Italian dressing adds a lot of flavor and helps hide the taste of the black eye peas if you are not a fan.

SONIA'S BLACK EYE PEA RECIPE

1 Can Trappey's Black Eyed Peas with jalapeno
1 Can Bushes Black Eye Peas with Snaps
Drain liquid
1/3 chopped red onion
1/2 chopped green bell pepper
3-6 chopped medium tomatoes
1/3 Bottle Lite Wishbone Italian Dressing
Mix all together and refrigerate for a couple of hours.  Serve with Tortilla Chips.


The photo above is from a post on Rustic/Western tablescapes that I just posted HERE.  Texas Caviar makes a great appetizer when serving BBQ or Tex-Mex.   I served it above in margarita glasses with tortilla chips and placed it at individual place settings.  No need to share!  LOL.  Whenever I have served it, everyone has loved it.
